So. This happened. It’s the stuff Organic Juice Bar Horror movies are made of. We were given some of the worst news there is if you are an organic juice bar like The GEM. Wait for it: THERE ARE NO ORGANIC CUCUMBERS AVAILABLE FOR A WEEK. O.M.G.G! (Oh, my, Green Glow) We broke into a cold sweat. What’s an Honestly Organic Girl to do?

We were encouraged to pull the “organic when available” schtick and use conventional cucumbers for the next few days, or even worse, pretend like nothing happened and no one would be the wiser. An inside source told us that we were the only folks in town who order only organic. YIKES. Tempting as it might be, UMMMM. No. If MK and I won’t drink it, we won’t sell it.

Wonder Twin Powers Activate. We sprang into action. We went on a scavenger hunt to several Whole Foods, and they really came out the hero! The search was a success, and we scrounged up about 350 pounds of organic cucumbers from around town. Our incredible produce supplier also helped!

We did the right thing. Don’t you want to know you are getting what you think you are getting? We are proud to say, at The GEM, you do. For us, it’s Honestly Organic. NOT when possible or feasible. ALWAYS.


A Probiotic Cult Classic

Get ready for the good health ride of your life. I want you to join The Coconut Cult with me. This one is actually good for you. The Coconut Cult is my new obsession, and it is soon to be yours too. I am talking about yogurt – dairy-free coconut yogurt, that is.

It’s important. Given all the research linking poor gut health to everything from immunity to depression to acne to insomnia, it’s no surprise that this probiotic powerhouse is catapulting into stardom. Your gut flora is responsible for your overall health and well-being. Take care of it.

It’s potent. This coconut yogurt is different and probably the most powerfully probiotic food you’ve ever tasted. They ferment 800 billion highly active probiotics into every quart, “creating an insanely probiotic coconut yogurt.” Other benefits: improved digestion, boosted immunity, and a cold-fighter.

Pico de Mayo!

Pico de gallo. It’s one of my favorite foods – nutrient dense, low in calories, and high in antioxidants. A fiesta in my mouth. Tex-Mex wouldn’t be the same without it. Most often, it’s a simple salsa of red tomato, green chile (jalapeño) and white onion. (Those 3 colors are those of the Mexican flag, by the way.) Add a squeeze of lemon or lime and a sprinkle of cilantro and salt, and you are ready to go!

One of our best-kept secrets is our pico de gallo, served up fresh daily inside The GEM. It is distinct from other picos because we use super flavorful grape tomatoes which makes it thicker and chunkier than most ‘diced’ garnishes. AND, the smaller, tastier grape tomatoes have more beta-carotene that the bigger ones. While I’m on it, pico de gallo is really good for you in other ways too. The ingredients boast protection against heart disease, diabetes, and my personal favorite, cancer. And to top it off, cilantro cleanses the body of toxic metals. BAM. Order me up some pico!

Although a perfect companion, pico’s not just for tacos and tortilla chips. Some of our GEMs like to use the ever-sturdy Sami’s chips as a dipper. I prefer to douse it over my GEM quinoa and scramble an egg. One of my besties prefers to think of our pico a chopped tomato salad, forgoing the garnish idea altogether, and simply uses a fork. However you dice it, pico de gallo makes me smile.

It’s not breaking news to read that breakfast is the most important meal of the day. But WHY? A good breakfast leads to better choices, more energy, boosted metabolism, better focus, reduced cravings throughout the day and even weight loss. It’s an effective way to be your best version of you.

If you are prepared, breakfast can be quick and easy. If you aren’t, you can sail off the rails really quickly by making choices that clearly don’t serve your health. In one of my favorite posts, I offer several great options for making breakfast happen at home. Many of you still weren’t convinced you could (or wanted to) do it on your own. We get it. That’s why we are here! Did you know The GEM offers amazing breakfast options? We make it simple to start your day off with a bright, shiny bang! Don’t have time? We do!

Smoothies. This is an obvious one. But if you’ve never tried our Cameo or Tahitian Pearl, you don’t know what you’re missing. Adding greens allows you 2 veggie servings out of the 8 you should consume daily. The fat from the coconut butter/manna keeps you satiated for hours. Want to really pimp your smoothie ride? Add extra protein – chia or hemp seeds – to shine like a rock star.

Lattes. Often these can be loaded with sugar and dairy and chemicals. NOT AT THE GEM. Ever had a real Matcha Latte? Not one made from syrupy concentrate? Incredible. Anyway you spoon it, it’s a clear morning winner.

French Press Coffee. Our coffee is the best kept secret in Dallas!! Combined with our warm cashew milk, this morning treat is sure to be your new addiction.

FOYO Parfait. This is technically a Smoothie Bowl in a cup. We top it with really yummy, not too sweet, granola. It’s got berries, tart cherry juice for inflammation, hemp seeds for protein and bananas. Add spinach or extra protein for a kick-ass start.

6 Things You Can Do Next Week BEFORE Spring Break Vacay!

Planning to hit the beach and sunshine for spring break next week? Got a little regret about how that hot tub bod is looking? Want to kick off your break with a little more sparkle in your eye, more glow on your face, and a little less bloat in your belly? Try these 6 things for the next week to feel and look better for your poolside debut.

For the next 7 days …

  1. Eliminate gluten. No bread, pasta, flour tortillas. Gluten makes you bloated. It can also make you constipated … oh, yeah, which makes you bloated. Yeah, it’s hard, but if you don’t want to do it—YOU CAN’T HANDLE THE TRUTH.
  2. Cut dessert sugars. Sugar makes you bloated, sugar makes your skin breakout, and sugar makes you want more sugar.
  3. Drink Daily Juice. The phytonutrients in green juice boost metabolism, help clear skin, reduce bloating, and balance blood sugars. This will help with the cravings. If you keep healthy food in your pantry and fridge, you will eat healthy food.

Without question this statement is true … for overall health, daily energy levels, our ability to focus. A well-stocked pantry and easy to grab snacks help us boost metabolism and reduce cravings later in the day. You’ve got stuff in your pantry that shouldn’t be there, but do you know what should be there? This post gives you a quick run-down of what a healthy pantry should contain.

You don’t have to go toss everything and start from scratch in one day. Switching to 100 percent clean foods can be challenging and even costly at first. Give it time, and take it easy on yourself. Try replacing one food item at a time. Sub in brown rice pasta for plain white pasta, or skip the Reese’s and do dark chocolate and organic peanut butter instead. As you add in the good, your taste buds will change, and you will naturally want clean, whole foods. The “fake” foods will seem less appealing.

Remember this important detail: Always read the label! If you don’t know what the ingredients are or how to spell them, toss it.

Start by personally saying goodbye to a few main evils. This doesn’t mean you can’t indulge every now and then … you decide what works for you.

TOSS

  • Vegetable oils like Corn, Canola, Wesson
  • Sugary, food-colored cereals. Even the organic/clean ones are for fun snacks NOT breakfast
  • Canned soups
  • Sugar-sweetened soda
  • ANYTHING with artificial sweeteners: “Lite, Diet, Lo-Cal”
  • ANYTHING with artificial food coloring – it’s made from petroleum and causes all kinds of issues
  • Frozen entrees that have more chemicals than you can begin to spell
  • Conventional chemical and GMO laden chips like Cheetos, Fritos (there are simple alternatives)

  • Brown rice
  • Quinoa (also a protein source)
  • Soba noodles (also a protein source)
  • Organic wheat and/or gluten-free pasta (Tinkyada in my fave)

  • Frozen organic peas, corn, artichokes, shelled edamame to use for quick dinner preps

  • Extra-virgin olive oil for salad dressings

  • Burger House Seasoning Salt – Amazing on homemade oven fries, grilled chicken or anything!

Summer break is soon coming to an end, and I’m already anxious about how to keep my kids nourished (thinking of breakfast ideas) and my sanity intact as schedules start to ramp up. Staying ahead of crazy hunger is the name of the game, whether it be for breakfast, snacks or dinner.

In this three part series, we will share quick and easy ways to feed your kids and yourself.

First up, breakfast ideas!

Without question breakfast is the most important meal of the day … for brain development, daily energy levels, and our ability to focus. So make it a priority! Discover our top tried and true breakfast ideas below.

Keys to a successful morning:

  • Be prepared.
  • Shop for the week.
  • Buy in bulk – Organic lovers, meet Costco!
  • Get a jump start – Set the table and put ingredients together in the fridge the night before. Place vitamins in little ramekins at their place setting. Plan to get up at least 10 minutes earlier. It makes all the difference.
  • Think protein, fiber and good fat.

Our Super 7 Breakfast Ideas

  1. Self Serve Oatmeal Bar. So cute! Just add hot water rolled oats and wait two minutes. Arrange toppings in small bowls:
    • Maple syrup, organic brown sugar, cinnamon
    • Blueberries and Bananas
    • Hemp or Chia Seeds
    • Coconut Butter, Organic Peanut butter or Almond butter
    • Coconut flakes & Cacao nibs
    • Toasted Pecans
    • Tip: Cook steel-cut oatmeal overnight in your crock pot the night before so it will be ready in the a.m. This will keep for a week in the fridge!
  2. Breakfast burrito/wrap – Fresh, whole wheat tortillas – not “MISSION” – or try my favorite, Siete Almond Flour tortillas!!, mixed with pastured eggs and pico de gallo. Drain a can of black beans the night before and add those in the mix too. Protein and healthy fats are crucial for brain function and keeping blood sugar levels even. Try your eggs scrambled in coconut oil.
  3. Fresh smoothies made with frozen berries, bananas, raw almonds/water, Epic Vegan Protein. Stock up on your ingredients from our GEM at Home Collection. Keep cacao and dates on hand too. Try this Peanut Butter Chocolate Smoothie. My family so loves this with additional chocolate protein added.
  4. Healthy Smoothie Bowl. Here’s a secret: Bowls are just smoothies with less liquid! Top yours with berries, hemp seeds, Marge’s granola. Another secret: Our FOYO Parfait is a smoothie bowl … in a travel ready cup! Need instruction? Check out this video on how to make the prefect bowl. YOU WILL BE A MORNING ROCK STAR!
  5. King Arthur GF Pancake Mix with blueberries. This gluten-free brand is amazing!!!! They really are fantastic when cooked with coconut oil. They need almost no syrup! Combine with scrambled eggs to balance with protein or wrap up a Applegate Farms Chicken Sausage Link.
  6. PB&J: Ezekial Bread toasted with almond butter and your favorite jam (not the kind with food coloring and lots of chemicals. Read your labels! I adore Avocado Toast!!
  7. Get ahead of the game and make a Breakfast Casserole!! This Hashbrown and Spinach Egg Casserole is amazing. Even better, pour the mixture into muffin tins for quick on the go breakfast bites or protein snacks! Another recipe here.

 

And hey, remember: The time in the morning is precious and can be a great way to take a moment to set your intention for the day, spend a moment with your kids and practice your own self-care.

Hi GEMs, it’s Leslie here, excited to celebrate another GEM milestone: It’s our five year anniversary!GEM love five years

What started as a small passion and love for a healthy lifestyle, evolved into beautiful community and an incredible friendship between two soul sisters. Five years ago today, The GEM made its debut. With a menu of just a few items (all of which are still going strong), we introduced the concept and power of organic juice to Dallas. Little did Mary Kathryn and I know our new-found passion would ignite a community of GEM lovers to not only embrace us, but whole-heartedly dive into GEM-inspired, disco filled healthy habits.

We are different, and we work hard to be that way. We are authentic—this is how we live. Our commitment is to the finest organic ingredients—nothing is ever short changed.

If we won’t eat it, we won’t sell it, true on day one and still true on our five year anniversary.

AND, we want to share our knowledge with anyone who wants it—through classes, blogs, counseling, or just by sitting at the bar and listening. So while we have evolved into something bigger, we’ve never changed our mission: to share ways to incorporate healthy foods and habits into daily life. We FIRMLY believe in the power of a whole food, plant-based diet, but also that health also comes from positive thoughts laced with a little disco sparkle.

Our desire for warmer, more grounding, fall food starts to increase now that cooler weather is upon us. fall foodYour body craves the comfort of roasted veggies, rich stews and robust soups.

Inside The GEM, folks start to line up for our famous Lentil Soup, Sauteed Arugula and Mushroom Salad and Turmeric Lattes. SHAZAM! Those things are good and they give your insides a warm hug.

While you are ALWAYS welcome at our door for your daily dose of fall food goodness, we think you should branch out and try some new things at home. This Black Bean Chili was inspired by Pamela Salzman’s Turkey Chili recipe (also amazing). Look for her new cookbook coming next year!

BLACK BEAN CHILI – A Fall Food Fav

 

INGREDIENTS

4 tablespoons olive oil

2 cups chopped red onion

2 cups chopped celery

2 cups chopped carrots

1 poblano pepper chopped

1 jalapeno, seeded and finely diced (optional)

2 cloves garlic, minced

¼ cup organic masa harina

2 tablespoon ground cumin

2 tablespoon ground coriander

1 teaspoon dried oregano

¼ teaspoon cayenne (optional)

2 teaspoons sea salt (or more to taste)

freshly ground black pepper to taste

6 cups veggie stock, divided — OR WATER, just adjust salt content!!

3 cups frozen organic sweet corn

3 15-ounce ounce cans cooked black beans (drained and rinsed)

 

DIRECTIONS

  1. Heat oil to a large pot. Add the onion, pepper, celery, carrots, peppers and garlic to the pot and sauté until tender, about 10 minutes.
  2. Add the masa harina, spices, salt and pepper to the pot and cook, stirring frequently for 5 minutes.
  3. Add 5 cups stock, 1 1/2 cup corn and the beans to the pot. Take the remaining 1½ cups of corn and puree with the remaining ½ cup stock/water in a Vitamix.
  4. Add the pureed corn to the pot. Mix well and bring to boil over medium-high heat. Lower the heat to a simmer and cook, partially covered for 30 minutes.
  5. Top with condiments like chopped onion, cilantro, avocado and Bearitos corn chips.
